Moreish Maple Pancake Cereal

Deciding on your first feast after waking up is not always an easy choice!

This super simple yet tasty recipe gives you the best of both worlds, so there’s no need to decide between crunchy cereal or fluffy pancakes, and it’s easy to make using our sunshine eggs.


• 1 Respectful Egg
• 2 tablespoons vegetable oil
• 225ml milk
• 2 tablespoons maple syrup, plus extra for drizzling
• 1 teaspoon vanilla extract
• 140g self-raising flour
• Pinch of salt
• 1 teaspoon baking powder
• 1 teaspoon butter

Crack your egg into a mixing bowl and whisk lightly, before adding the vegetable oil, 125ml of the milk, maple syrup and vanilla extract and whisking to combine.

Into a separate mixing bowl, sift the flour, a sprinkle of salt and the baking powder, then add to the bowl of wet ingredients. Whisk the mixture until all ingredients are nicely combined and the mixture is smooth. Pop a non-stick frying pan on a medium heat.

While your pan is heating up, add the pancake mixture to a piping bag and leave it to rest for 5 minutes. If you don’t have a bag, you can use a teaspoon to put small circles of mixture into the pan. For a low waste tip, why not use a reusable piping bag or an empty squeezy sauce bottle?

Add the butter to the pan and heat until melted. Once the pan is coated lightly in golden butter, you can start dropping in small circles of batter. Make sure there is enough room between pancakes to flip them over and to prevent them sticking together!

Once the pancakes begin to bubble, use a spatula or palette knife to flip them over, and cook until both sides are a delicious, golden brown colour.

Remove the mini pancakes from the pan, transfer them to your favourite cereal bowl and repeat until you have used all the mixture. If you don’t want to use all the mixture at once, transfer it to a resealable jar or container where it will keep in the fridge for up to 24 hours.

Top your mini pancakes with a drizzle of maple syrup or your favourite sweet sauce, along with a handful of fresh fruit. Add the rest of the milk to your pancake cereal – use as much or as little as you like, depending on how you like it!
