A little bit sweet, a little bit bitter, we’ve taken a simple courgette and turned it into something irresistible with just a handful of ingredients. Say hello to our cheesy courgette fritters, great for lunch or a standalone munch, these crispy beauties are simply golden! It’s amazing what you can rustle up with some staple ingredients.
• 1 courgette, trimmed and coarsely grated
• 50g baby spinach, washed and finely sliced
• 2 Respectful eggs
• 2 tablespoons plain flour
• 40g cheddar, grated
• 2 tablespoons olive oil
Combine the courgettes and spinach in a large mixing bowl. Crack in the eggs and mix. Add the flour and cheddar – season generously.
Heat the oil in a large frying pan over a medium heat. Dollop tablespoonfuls of the batter into the pan and cook for 4-5 minutes before flipping and cooking for a further 3-4 minutes, until golden brown. Remove to a plate and repeat with the remaining batter.
Enjoy straight away as a snack or for lunch with a green salad and a few slices of ham.
