Cheesy harissa eggy toastie

An indulgent cheese toastie with kick of harissa to give an extra oomph to your lunch or evening snack! Eggy bread just got a mouth-watering Respectful makeover.

Preparation time

15 minutes




  • 1 Respectful egg
  • 2 tablespoons milk
  • 1 teaspoon harissa paste
  • 75g mozzarella, sliced
  • 2 slices thick sliced bread
  • 2 spring onions, finely sliced
  • A knob of butter
  • ½ tablespoon olive oil


Crack the egg into a shallow bowl with the milk and harissa paste. Season and whisk together.

Lay the slices of mozzarella on one piece of bread followed by most of the spring onions and top with the other piece. Dip the sandwich into the egg, allowing it to soak up, before flipping over to soak the other side.

Melt the butter with olive oil in a frying pan over a medium-low heat. Cook the eggy bread sandwich for 4-5 minutes, until golden and crisp. Flip over and cook for another 3-4 minutes until golden all over.

Slide onto a plate, cut in half and eat straight away, scatter with any remaining spring onions.
