A stir fry is the ultimate quick lunch or dinner, made even tastier when topped with our wholesome eggs. Frying the eggs in chilli oil brings a spicy kick, and a sprinkle of sesame seeds adds a satisfying crunch. This recipe will become a staple – we promise!

Ingredients
- 2 fine egg noodle nests
- 1 pack stir fry vegetables
- 1 tablespoon peanut oil or vegetable oil
- 2 tablespoons low salt soy sauce
- 1 teaspoon sesame oil
- Juice of 1 lime
- 2 Respectful eggs
- 2 tablespoons chilli oil
- 1 tablespoons sesame seeds, toasted
Method
- Cook the noodles in a pan of boiling water, according to pack instructions. Drain and run under some cold water, then set aside.
- Heat 1 tablespoon of peanut or vegetable oil in a wok or large frying pan and stir fry the vegetables for 2 minutes, or until cooked to your liking.
- To the wok, add the drained noodles, soy sauce, sesame oil and lime juice, then toss to combine.
- In another frying pan, heat up 2 tablespoons of chilli oil. When hot and sizzling, crack in the eggs and fry until the edges are crisp.
- To serve, divide the stir fry between two plates, top each with a crispy chilli egg and sprinkle with toasted sesame seeds. Enjoy!
