A stir fry is the ultimate quick lunch or dinner, made even tastier when topped with our wholesome eggs. Frying the eggs in chilli oil brings a spicy kick, and a sprinkle of sesame seeds adds a satisfying crunch. This recipe will become a staple – we promise!
Ingredients
• 2 fine egg noodle nests
• 1 pack stir fry vegetables
• 1 tablespoon peanut oil or vegetable oil
• 2 tablespoons low salt soy sauce
• 1 teaspoon sesame oil
• Juice of 1 lime
• 2 Respectful eggs
• 2 tablespoons chilli oil
• 1 tablespoons sesame seeds, toasted

Method
Cook the noodles in a pan of boiling water, according to pack instructions. Drain and run under some cold water, then set aside.
Heat 1 tablespoon of peanut or vegetable oil in a wok or large frying pan and stir fry the vegetables for 2 minutes, or until cooked to your liking.
To the wok, add the drained noodles, soy sauce, sesame oil and lime juice, then toss to combine.
In another frying pan, heat up 2 tablespoons of chilli oil. When hot and sizzling, crack in the eggs and fry until the edges are crisp.
To serve, divide the stir fry between two plates, top each with a crispy chilli egg and sprinkle with toasted sesame seeds. Enjoy!
