Respectful eggs BLTE sandwich

Proper BLTE sarnie

We’ve put a Respectful E into a classic BLT sandwich to make a delicious snack, lunch, or midnight munch. Crisp lettuce, juicy tommies, salty bacon, creamy mayo and a crispy fried egg – brought together with a gooey golden yolk. Choose your bread and your favourite condiment and get ready to mmmm…

Preparation time

10 minutes




• 3 rashers streaky bacon
• 25g unsalted butter
• 1 Respectful egg
• 2 tablespoons mayo
• 2 teaspoons wholegrain mustard
• 2 slices fresh white/brown bread
• 2 round crisp salad leaves, washed
• 1 ripe tomato, sliced


Preheat the grill to medium-high. Line a tray with foil and add the bacon rashers. Grill until crispy and golden.

Spread most of the butter over both sides of the pieces of bread. Heat a frying pan over a medium heat and toast both sides of the bread until golden. Remove to a board keeping the pan over the heat.

Add the remaining knob of butter and crack the egg into the pan and fry until the white is set and the yolk is still runny.

Mix the mayo and wholegrain mustard in a small bowl and spread evenly over the 2 slices of toasted bread. Top with the lettuce and then the tomato slices, and season. Lay the bacon over and finish with the fried egg. Top with the remaining piece of toasted bread and serve immediately!
