French toast always feels like such a treat and the beauty lies within its simplicity – and the fact that it works well with bread on the brink of being binned. It’s quick, tasty and all about the eggs, making it a favourite of ours.

Ingredients
- 1 Respectful egg
- 2 tablespoons milk
- 1/2 tablespoon caster sugar
- Drop of vanilla extract
- 2 slices bread
- Knob of butter
- Seasonal fruits, local honey and spoonful of yoghurt, to serve
Method
- To make delicious French toast, mix together one Respectful egg, 2 tablespoons of milk, 1/2 tablespoon of caster sugar and a drop of vanilla extract until the sugar has dissolved.
- Thoroughly coat your choice of bread by dipping it into the mix. Fry the soaked bread in some fresh butter until glistening golden on both sides.
- To serve, scatter some seasonal fruits on top, with a drizzle of local honey and a dollop of yoghurt.
